                           This spicy Malaysian fried rice recipe is a great meal when you are low on time but don’t want to skimp on flavour – who’d want to miss out on Malaysian flavour? The combination of coconut, peanuts and fresh vegies is a real tropical treat. Try this Malaysian Satay rice recipe whenever you’re in a rush. Serves up to 4 people in well under 30 minutes.

Ingredients

  • 400g skinless chicken breast fillet, stir-fry strips
  • 1 tablespoon reduced fat crunchy peanut butter
  • 1 value pack Continental® Satay Rice
  • ½ cup water
  • 1 1/3 cups reduce fat milk
  • ½ teaspoon natural coconut essence, optional
  • 11/2 cups snow peas
  • 1 large red capsicum, chopped
  • 2 tablespoons chopped coriander, optional
  • ½ teaspoon natural coconut essence, optional

Directions

  • Heat oil and cook chicken until lightly browned. Add peanut butter and water, bring to the boil.
  • Add rice and coconut essence, milk, cover and cook gently for 10 minutes, adding the snow peas and capsicum for the last few minutes of cooking. Stir well, replace lid and allow to stand for 2 minutes before serving.
  • Sprinkle served with coriander.
  • Hint: To make this fried rice recipe slightly different, sSubstitute prawns for half of the chicken, and sprinkle with sliced spring onions.

 


BBQ Prawns


 BBQ Prawns



Succulent prawns marinated in mildly spiced Malaysian peanut sauce and served straight from a sizzling BBQ. Either as an entrée or as part of your main BBQ meal this exotic reinvention of an Aussie favourite will have everyone licking their lips .

Ingredients

  • 1 packet Continental Malaysian Creamy Satay Recipe Base
  • 600g green prawns, peeled
  • 2 tablespoons oil
  • 8 wooden skewers, soaked in cold water

Directions

  • Mix Recipe Base and oil together in a large bowl, add prawns and coat well with marinade. Allow to marinate for at least 30 minutes in the fridge.
  • Thread prawns onto skewers and barbecue for 5-10 minutes until cooked through.
  • Delicious served as an entrée or part of your barbecue meal.

 

 

Sweet Potato & Zucchini Gratin

                  This gratin has an amazing contrast of flavours and textures. Creamy sauce with tender vegetables topped with crunchy breadcrumbs and cheese. Perfect on its own or as a side

Ingredients

  • 1 large (600g) sweet potato, peeled and thinly sliced
  • 2 large (600g) potatoes, peeled and thinly sliced
  • 2 zucchinis, sliced
  • 1¼ cups (310mL) milk
  • ½ cup (125mL) cream
  • 1 pack Continental Recipe Base
  • ½ cup grated reduced fat tasty cheese
  • ½ cup panko breadcrumbs

Directions

  • Preheat oven to 180˚C. Layer vegetables in a large greased ovenproof dish.
  • Combine milk, cream and Recipe Base and pour over vegetables.
  • Combine cheese and breadcrumbs and sprinkle over the vegetables. Bake for 45-50 minutes until golden brown.
  • Hint: Serve with salad.

 

 

Chicken & Spinach Macaroni Bake

Chicken & Spinach Macaroni Bake


Cheesy saucy macaroni partnered with chicken and spinach, and no need to cook the pasta first!

Ingredients

  • 2 teaspoons oil
  • 500g skinless chicken breast, diced
  • 1 cup (250mL) milk
  • 1¾ cups (310mL) water
  • 1 pack Continental Recipe Base
  • 2 cups baby spinach leaves
  • 250g raw macaroni pasta
  • 1 cup grated reduced fat tasty cheese

Directions

  • Preheat oven to 180˚C. Heat oil in a frying pan and brown chicken.
  • Add milk, water and Recipe Base, bring to the boil stirring.
  • Stir through spinach and uncooked pasta and pour into a large greased ovenproof dish. Sprinkle with cheese and bake for 35 minutes until golden brown.
  • Hint: Serve with salad.



Steak Sandwiches with Balsamic Onions

Steak Sandwiches with Balsamic Onions


Beef steak basted in Continental beef stock and seared on the BBQ, served with browned onions and tomato chutney, all sandwiched between two slices of toast. Maybe with a crispy fresh lettuce leaf for extra crunch. Grab with both hands and enjoy every bite.

Ingredients

  • 2 teaspoons oil
  • 1 large onion, sliced
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar
  • 4 x minute steaks
  • 1 Continental Stock Pot Beef
  • 8 slices crusty bread, lightly toasted
  • 100g lettuce leaves
  • 2 tomatoes, sliced
  • ½ cup tomato chutney

Directions

  • Heat oil in a frying pan and brown onions. Add sugar and balsamic vinegar and cook for a further 2 minutes until slightly caramelised.
  • Spread each steak with Stock Pot and barbecue or grill.
  • Place lettuce and tomato onto toasted bread, top with steak, onions and tomato chutney
